Crushed green olives (spicy) – pickled in sunflower oil

The olives, coming from Italian cultivation, are harvested when they reach maturity. After harvesting, the medium-sized olives are crushed and placed in a bath of sunflower oil, chili flakes, parsley, oregano, garlic and salt. Crushing the olives brings two taste benefits. The first advantage is that the olives retain the flavors of the Spice / sunflower oil – insert can absorb better. The second advantage is that the olives develop a stronger flavor, as the contained pit releases its flavors more intensely to the fruit through the crushing process. The crushed olives are excellent for an antipasti platter. The balanced taste of spicy, tangy and fruity make the olives a speciality.
